Pizza minus the guilt

Vegetarian pizza is my desert island food. Once when I was a child, I was I interviewed on the local radio station and announced to anyone tuning in that morning that my favourite dinner was pizza! 

I made my own pizza sauce today using: 

Garlic

Fresh oregano

Organic passata 

A small piece of chilli 

  
I toasted a wholemeal pitta bread, cut it down the middle to make two pitta pizza bases, smothered the sauce on then added:

Chopped bell peppers

Onion

Fresh tomato

More fresh oregano and a mozerella/cheddar cheese mix. 

Whack in the oven for 20 mins et voilla. You’ll be glad you didn’t pick up the phone to the local pizza place!

Dreamy, creamy avocado 

For me, avocados are a real treat. As a member of several weight loss groups for eons, these were always a no no. Breaking the chains and the mental cycle of not counting points or syns or whatever is hard. 

Knowing I’ve had a good balanced breakfast & lunch and cut out as much processed crap out of my day, makes eating one of these bad boys worth it. I’ve added:

Spinach

Rocket

Tomato

2 free range organic eggs

And a small red chilli

No dressing required.

Assembly required…

I love to cook from scratch but I also love to assemble food that doesn’t need to be cooked, to form a healthy nutritious meal. 

For today’s assembly I used:

Smoked salmon 

Spinach

Rocket (Arugala)

Avocado

Plum tomato

Finely chopped red chilli 

Just whacked on a plate and soon after, whacked straight down my neck! Lovely flavours, and no stinky kitchen after cooking 🙂
